Our new favorite breakfast recipe is sweet potato breakfast hash with eggs. Yes, that’s right, dinner. My sweet potato hash is made with red onions and baby spinach. Sometimes ham, herbs, as well as runny eggs. This is a slightly sweeter and savory version of the classic hash.

This recipe is simple, delicious, and filling. Sweet potatoes are my favorite vegetable, so I always have some in the pantry. Sweet potato hash is our lazy dinner choice when we have nothing else or too lazy to cook. Sweet potato breakfast boats are also best option.

TIPS & TRICKS for this Recipe

  • You should not start with raw sweet potatoes. They will burn before you can eat them. Take the potatoes out of the microwave and check that they are softened but firm enough to cut without mashing. A sharp knife helps!
  • It is essential to get the sweet potato texture right in this recipe. Pre-microwave sweet potatoes for 3-4 mins before cutting and sauteing in the pan. This speeds up the cooking process and ensures the potatoes don’t become mushy.

Sweet Potato Hash Substitutions and Ingredients

The breakfast hash changes every time I make it. I add different spices, vegetables, and protein depending on what I have. It is a great way to use any leftovers in your fridge. This dish is best served with ketchup or hot sauce (I prefer Cholula) or sliced avocado.

  • Spices: I use garlic powder and paprika, my favorite seasoning on potatoes, and sweet potato fries. Sweet potatoes are a great complement to anything Smokey, like bacon salt or chipotle chili. Salt and pepper make everything shine!
  • Protein: Ham, bacon, breakfast sausage, or even sweet Italian sausage are among favorites. It doesn’t matter whether it’s chopped or ground. Diced meats that are smaller in size are always better. You can omit any part of the recipe.
  • Vegetables: Red and yellow onion, green onions, carrots, bell peppers, jalapeno, mushrooms, and spinach. I use onion as my main ingredient and add other ingredients depending on what I have. For extra flavor and heat, I prefer poblano peppers to bell peppers.

My sweet potato hash is made with sweet potatoes, baby spinach, red onions, and sometimes ham. 

  • Two large sweet potatoes (I leave the skin on).
  • 4-6 eggs
  • 1-2 cups baby spinach
  • 1/2 cup chopped ham (or bacon).
  • One medium-sized red onion, chopped.
  • One teaspoon of garlic powder
  • 1/2 teaspoon paprika
  • Two tablespoons chopped fresh parsley.
  • Salt and pepper to taste
  • Olive oil for cooking
  • You can add hot sauce, ketchup, and chopped avocado can be added for an additional serving.
  • Preheat the oven to 400°F. Place the potato skins on a plate and heat in the microwave for 3-4 mins, flipping halfway. The potatoes should feel softened but firm enough to be cut into small pieces (think almost ripe avocado). Allow the potatoes to rest for at least 2 minutes before you cut. Cut potatoes into half-inch cubes (more minor is better).
  • On medium heat, heat a little oil in an oven-safe saucepan. Season onions with salt and pepper. Allow to cook until the onions are softened, approximately 3 minutes. Cook for another 1-2 minutes or until the spinach is wilted.
  • Add potatoes to the skillet and drizzle olive oil. Gently mix all ingredients. Season with salt, pepper, garlic powder, paprika, and salt. Allow cooking for about 3-4 minutes, turning once or twice. To retain the steam, cover the skillet if the potatoes become too firm.
  • Use a spoon to make four small holes in the hash. Place the eggs in the wells, and immediately put the skillet in the oven. Bake the eggs for 7-10 minutes or until the egg whites become opaque. Serve with avocado slices and hot sauce.

This method produces sweet potatoes that retain their shape while being soft. Sweet potatoes that have been overcooked taste tremendous but tend to clump in the pan.
