Ingredients

  • Two large sweet potatoes
  • Four strips of bacon chopped.
  • Three chopped green onions
  • Basil pesto: 3-4 Tablespoons
  • Seasoning for a bagel with a dash of everything
  • Salt and pepper to taste

  • 2/3 cup olive oil
  • 3 cups basil leaves
  • Two cloves of garlic
  • Two tablespoons pine nuts
  • Salt and pepper to your liking
  • 1/3 cup grated Parmesan cheese

Sweet potato boats

  • Preheat oven to 400°F
  • Use a fork to poke the skin of the potatoes. Microwave sweet potatoes for 10 mins, flipping halfway through. Alternatively, you can bake sweet potatoes at 425°F for 45-50 minutes.
  • Cook bacon on medium heat for 3-4 minutes on each side in a large saucepan. To drain, transfer to a plate lined with paper towels. Cut into small pieces and place aside. Bacon should be crisp.
  • When potatoes are easily pierced with a fork, cut into equal halves. Place halves on a baking sheet. Use a fork to mash the potatoes until they are soft and tender. Season each potato with salt and pepper. The skins should not be removed from their filling. Make a trench in each potato half and crack an egg in the middle. It is okay if some of the egg whites spill over the edges. Bake for 8-10 minutes or until the egg whites have become opaque.
  • Take the potatoes out of the oven and sprinkle them with bagel seasoning, chopped bacon, and green onion. Top each one with pesto. Serve immediately

  • Blend all ingredients for pesto except the olive oil in a blender or food processor. Blend until smooth. Keep the motor running and add olive oil slowly until well combined. Pesto should not be too thick or too thin. Set aside. You can make this a day ahead. You can also use a single-serve or standard blender if you don’t own a food processor. It is important to blend it slowly enough, or it will become a thick paste. Continue to pulse the mixture until it becomes smooth and granular. If the oil becomes too thick, add more oil.

This recipe is excellent with fresh basil pesto. It is easy to make and freezes well.
