Instant Ramen Noodle Stir Fry

Instant ramen noodles are a favorite in my pantry. I love the ease of making a quick soup or stir-fry using leftover meat, seafood, and vegetables.

It’s flexible in its ingredients, and it’s quick and easy to prepare. You can have it ready in just 30 minutes.

This recipe calls for ramen a-la pancit canton. I added chicken, Chinese sausages, shrimp, broccoli, and carrots. You might also like the following list of proteins and veggies.

Ingredients for pancit

  • cabbage
  • Sliced pork belly
  • chicken livers
  • Crispy fried tofu
  • Snow peas
  • Bok choy
  • Strips of beef sirloin
  • Squid or fish balls
  • Celery
  • kikiam
  • Hard-boiled eggs or fried eggs
  • Fried garlic bits

This recipe also works well with Lucky Me instant pancit canton. However, my favorite brand of instant noodles is Indomie instant noodles. You can find it at Walmart, Target, and many Asian supermarkets, as well as online. This brand is made explicitly for stir-frying and has a much better texture.

To enhance flavors, use the seasoning packet included or the spicy sauce. Combine all ingredients in a small bowl and mix with the noodles.

Dragon noodles spicy sauce

  • Two tablespoons of water
  • Two tablespoons Srichacha
  • Two tablespoons of soy sauce
  • Two tablespoons brown sugar

Some helpful tips

  • Wait to boil the noodles. Cook them for a few minutes less than the suggested time. They will continue to cook once stir-fried with all the other ingredients.
  • Cooking is fast, so make sure you have all your ingredients ready.
  • To ensure even cooking, cut ingredients into uniform sizes.
  • Use a wok or wide pan with high sides for easy, less messy stir-frying.

Ingredients

  • 2 packs of Lucky Me Instant Pancit Canton or Indomie Instant Ramen Noodles
  • 1 tablespoon of canola oil
  • 1 onion, chopped and peeled
  • 1/4 pound of boneless chicken breasts, cut thin
  • 2 pieces of Chinese sausage, cut thinly on a bias
  • 1/4 lb shrimp, deveined and peeled
  • 1 large carrot, peeled & julienned
  • 1 head broccoli, cut into florets
  • Fried garlic bits
  • Green onions chopped
  • calamansi halved

Cooking steps & Instructions

  1. Cook instant noodles according to the package instructions in a saucepan on medium heat. Drain the instant noodles well and reserve 1/4 cup of liquid.
  2. Toss the noodles with the seasoning packet and coat well.
  3. Heat canola oil in a large pan on medium heat.
  4. Cook onions until tender.
  5. Cook the chicken, stirring frequently, until it is lightly browned.
  6. Cook the Chinese sausage until it is lightly browned.
  7. Cook the shrimp until they turn pink.
  8. Add broccoli.
  9. Continue to cook the reserved liquid, stirring frequently, until the broccoli florets become tender and crisp, and then add the liquid.
  10. Cook until carrots are tender-crisp.
  11. Stir in instant noodles, and cook until heated through.
  12. Transfer to a serving platter and garnish with green onions, garlic bits, and calamansi if desired. Serve immediately

Important Note
