How to Make It?

Step 1

In a saucepan, bring the stock to a boil. Keep heat at medium-low and warm.

Step 2

Melt the butter in a large skillet or in a large pot with a wide bottom. Stir the butter into the rice and allow it to sit for 1 minute.

Step 3

Mix 1 cup broth (1 1/2 to 3/4 cup) and stir. Leave it alone for 2 to 3 minutes. Run a wooden spoon along it. Rice should slowly fill the channel.

Step 4

Stir and add more broth. Cook the broth for 3 minutes, stirring occasionally. Continue cooking until there is about one tablespoon of broth left. This will take 15-18 minutes total for rice. Turn off the heat.

Step 5

Salt, remaining broth, cheese, and mix. Stir for 2 minutes. Serve immediately in warm bowls. Sprinkle more cheese on top if you like.
