How to make Tater Tot Breakfast Casserole?

This recipe begins with a layer of browned ground pork breakfast sausage and a layer of frozen tater tots (acting like hash browns). Any Italian ground sausage will work fine if you don’t have ground breakfast sausage.

Creamy eggs in the near scrambled form are used to ‘glue’ the casserole filling together. The ground sausage should be cooked in a skillet. Drain any excess fat and then pack the sausage into a single layer to form the bottom of your skillet. The sausage forms the “crust-like” base of the skillet.

When baking tater tots, it is important to freeze them. This is to make sure they don’t burn. Tots should not be layered more than once. The egg can be spread evenly throughout the casserole by leaving a little space between each layer. If you like extra bacon flavor and crunch, add precooked bacon to the top of the tots. Before adding the egg, add the bacon to top of the cheese. Bake the casserole until the tater-tots are golden brown.

Do I need a cast iron skillet?

Cast iron skillets are ideal for this recipe because they can be made in one pan. If you don’t have a cast iron skillet, you can cook the sausage in one pan. Then transfer it to an oven-safe casserole dish or deep pie dish.

Ingredients for this Recipe

  • 28-ounce bag of tater tats
  • 8 eggs
  • 1 cup milk
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 teaspoon onion powder
  • Garnish with green onions
  • Ground breakfast sausage (1 lb) (Italian sausage also works).
  • 1 cup finely shredded mild cheese (or mozzarella/cheddar combination)
  • Optional 4-5 strips bacon, fully cooked

Steps to make Tater Tot Breakfast Casserole

      1. Preheat oven to 350°F
      2. Cook the sausage in a cast iron skillet until it is browned and cooked. Break the sausage with a spatula. Use a paper towel to absorb any fat.
      3. The spatula can gently press the sausage down onto the skillet, creating an even layer of sausage on the bottom.
      4. In a medium bowl, whisk eggs. Salt, pepper, onion powder, and garlic powder are all necessary. Mix well and place in a bowl.
      5. Layer tater-tots (on each side) on top of as much sausage as you can without any overlap. You can fit as many as possible with a little space between them. Sprinkle 1/2 cup cheese on top (if you add bacon, add it now). Finally, pour the egg mixture evenly across the skillet. Bake at 350 degrees for 40 to 45 minutes. Keep the pan covered on the middle rack. Tots should be golden brown.
      6. Add 1/2 cup cheese to the top of the baked goods during the last 5 minutes. Take out of the oven and sprinkle with green onions. Let cool for 5 minutes before serving.

It can be made in another pan if you don’t own a cast iron skillet. For baking, you can use an oven-safe skillet or transfer it to a baking dish.
