This healthy pumpkin-baked oatmeal is a great place to start if you have Libby’s pumpkin in your pantry.

It tastes just like dessert and has less than 200 calories.

Here are the ingredients you will need: cinnamon, pumpkin puree, and pumpkin pie spice.

If desired, add vanilla extract and a few shredded coconuts, chopped walnuts, or pecans.

You can make this oatmeal breakfast recipe with either quick or rolled oats. You can also use spelled or flat quinoa flakes. I have yet to try to substitute steel-cut oats, so I cannot recommend them.

Pumpkin pie spice gives the oatmeal cake a warm Fall flavor. You can substitute cinnamon for the pumpkin pie spice if you don’t have it.

How to make baked Pumpkin Oatmeal?

  1. Mix all ingredients and heat the oven to 350°F.
  2. Mix all ingredients in a bowl or blend them until smooth.
  3. In a baking dish, place the mixed oatmeal batter. A deep dish is best if you like your oatmeal batter to be gooey. A comprehensive, shallow dish is better for oatmeal with a uniformly cooked and cakey texture.
  4. Bake for 20 minutes on the center rack.
  5. Take out of the oven and add almond butter, chocolate chips, or pure maple syrup to the top.
  6. If you like, you can make the oatmeal cake the day before. After baking, let it cool and cover the cake with loosely sealed plastic wrap. Refrigerate overnight. Heat it in the microwave or oven the next day for a quick breakfast.

This quick recipe does not require a blender.

A personal blender is an excellent option if you want to use the blended oatmeal option. For easy cleaning, brands like Magic Bullet can be put in the dishwasher.

  • 1/4 cup canned pumpkin or mashed sweet potato
  • 1 1/2 tbsp of your sweetener choice
  • Optional: 1-2 Tbsp of your choice nut butter
  • You can add optional ingredients such as chocolate chips, pecans, crushed walnuts, or shredded coconut.

Instructions

  • Preheat the oven to 350 F
  • Stir all ingredients together or use a blender to blend them
  • Blend until smooth
  • Put the mixture in a greased, oven-safe dish
  • A more profound word will give you a more gooey interior
  • You can use a shallower dish if you prefer your recipe to be cooked through
  • Bake for 20 minutes
